Pizza…healthy? It can be done and without your kids ever knowing. This was a house favorite when I was growing up. Now that I have kids of my own, I’m always looking for ways to sneak in that healthy food. These pizzas are the perfect camouflage. It’s also a kid friendly activity. Kids will not only enjoy help making dinner but you can be sure they will eat it because they are in charge of their toppings.
- English Muffins
- Spaghetti Sauce (jar or handmade) or pizza sauce
- Fresh Spinach
- Pizza Topping (all your favorites)
- Green Peppers
- Black Olives
- Shredded Cheese
- Food Processor
- Cookie Sheet
Let’s get cookin!
Begin by toasting the english muffins. Doing this will make sure your pizzas don’t get soggy. While they are toasting let’s get our secret ingredient prepared.
*Remove all children from the area. Top secret ingredients being created*
Clean 1/2 cup – 1 cup of fresh spinach and place in your food processor. Add 1 cup of your spaghetti sauce (unheated/cold). Blend well.
Other options besides spinach: broccoli, zucchini, cauliflower, carrots, or even cooked shredded chicken. Just be sure that any veggie that is crunchy is steamed before you put it in the food processor. It’s not a secret if your sauce is crunchy 😉
Combine the spinach mixture and the rest of your spaghetti sauce in a mixing bowl. Mix well.
(toast more muffins)
*It is now safe to bring your kids into the kitchen*
Let’s set up the pizza prep area. I placed all the kid toppings into bowls for easier access. I left the adult toppings to the side. Make sure to have spoons available for anything needing a scoop.
Using a spoon, spread the sauce onto the muffin. 2 spoonfuls are usually enough sauce. Doing less will result in your pizza being dry.
(can you see the spinach? Heehee, so sneaky!)
Now the fun part. Add those toppings (hint: to help with balance, it’s better to start with the pepperoni then add the cheese last).
Preheat your oven to 350 degrees. Place all completed pizzas on your cookie sheet.
Bake for 10-15 mins. Cheese should be completely melted. Check to be sure the sauce is hot. If the sauce is hot the ingredients will also be hot.
For a little extra pizza flare, I cut them into quarters.
That’s it! Enjoy this yummy dinner and try not to look to smug when you kids tell you how good the pizza is.
Thanks for stopping by!
